Beach Day Chickpea Salad

🧂 Ingredients

  • 0.25 cup raisins
  • 1 can chickpeas, drained
  • 2 celery stalks, diced
  • 2 Tbsp chopped parsley
  • 2 Tbsp whole grain mustard
  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • some salt
  • some pepper

📝 Instructions

Step 1

Soak the raisins in warm water for 5 minutes to soften, then drain.

Step 2

Coarsely chop the raisins and add them to the chickpeas, drained.

Step 3

Add celery stalks, diced, chopped parsley, whole grain mustard, lemon juice, olive oil, and salt and pepper to taste, and stir well to combine.
